Ah. Good old comfort food. Nothing beats a steaming hot bowl of spicy (but not too spicy) chili.
First of all, you'll need:
1lb ground beef
1 large onion, chopped
1 small green or yellow pepper, chopped
1 can diced tomatoes
2-3 tbsp. chili powder
1 tsp. cayenne pepper
2 tsp. cumin seed
1 tsp. garlic salt
salt and pepper to taste
1 can kidney beans
fresh hot peppers, chopped (to taste)
Start by browning the ground beef in a frying pan. Add in the onion and peppers. Once browned, drain off the excess liquid and dump in the tomatoes (and the rest of the ingredients - except for the kidney beans).
Simmer, stirring occasionally.
10 minutes before serving, add in the kidney beans.
Serves 4-8 and stores well.
Note: You can play around with this recipe as need be. A third of a cup of corn kernels would be a nice addition to the mix.
