Kafta

A Middle Eastern/Mediterranean favorite that's easy to prepare and tastes great on the barbeque.  A perfect appetizer for a summer get-together.

You'll need the following:
  • 1.5lb ground beef (lean)
  • 1 onion, chopped fine
  • 0.5 cup parsley, chopped fine
  • 0.25 to 0.5 tsp cayenne pepper
  • 0.25 tsp ground allspice
  • 1 tsp salt
  • 0.25 tsp pepper
  • skewers (presoak in water if wooden)
Combine all ingredients in a large bowl, mixing with your hands.

Once ingredients are thoroughly mixed, grab a handful of meat and roll into a long tube (about the size and shape of an erect penis).  Insert skewer lengthwise.  Or, alternately, roll balls of meat approximately the size and shape of medium sized meatballs - and instert 3 or 4 onto each skewer.

Cook kafta skewers on the hot grill for about 10 or 15 minutes (until the meat is no longer pink).

Serves 4-8.
